The Brisaola Alpi
Since old times "Brisaola" has been a typical cured beef. At first, it has been known and eaten only in our region, then it became famous and eaten everywhere in Italy & now this is spreading all over Europe.
The secret of Brisaola's success is its soft spicy taste. The name “Brisaola” comes from local dialect and is a word only used to describe the homemade Brisaola product produced by Alpi s.r.l.
“The Brisaola Alpi”, produced from the “Fesa”(Topside), one of the most succulent parts of the hindquarter, its compact and natural in shape. It has a red colour and a delicate, slightly aromatic aroma.Technical details
